Sweet Potato and Feta Pies with Hot Honey

It's super easy and perfect for the holiday season with all the parties and get-togethers. It's also great if someone is coming over to bring gifts because you can whip these up in no time and impress them.
If you keep a few rolls of puff pastry in the fridge or freezer, you can make all sorts of little canapes in a jiffy. The hot honey is absolutely delicious and gives the sweet potato a slight kick which is a hit with us, and we're sure it will be with you too. The combination of feta with sweet potato is fantastic because the saltiness really complements the sweetness. We hope you give it a try and enjoy it as much as we did!
Ingredients
2 Sheets of ready rolled puff pastry
1kg Sweet Potatoes
3 tbsp honey
1 tsp Paprika
2 tsp Aleppo chilli flakes
1/2 tsp chili powder
2tsp lime juice
125g Feta
2 tbsp thyme
seasoning
1 Egg Yolk
Method
Add the honey, Aleppo chili, paprika, and chili to a saucepan and heat gently for 3 minutes.
Piece the sweet potato and microwave on full for 8- 10 minutes till soft.
Unroll the puff pastry sheet and cut into 3 equal lengths then cut 4 vertical lines down equally. This should make 12 squares on each sheet.
Scoop out the cooked sweet potato flesh and add the crumbled feta, lime juice hot honey, and fresh thyme. Mix and season well
Put a teaspoon and half on each square then wet the edges with water and fold down into a triangle shape.
Crimp the edges with a fork.
Glaze with the egg yolk and sprinkle with sesame seeds.
Cook at 200* for 12- 15 minutes.
